MEXICAN SALAD

A fun salad for friends and family which leads to great conversation.

Ingredients: Serves 4

1 lettuce washed in leaves broken in small
2 Tomatoes washed & cut into 1/4
1/2 Cucumber sliced
1/2 red pepper sliced
500g lean steak mince
1 large carrot grated
1 Tacos original spice
Oil for cooking
1/2 Cumin
2 cloves garlic chopped
1 onion peeled & chopped
1/2 cup grated cheese
4 Tbs sour cream or cream
1 ripe Avocado mashed( or guacamole)
1 tin overcooked beans ( or heat beans in tomato & mash slightly)

Heat oil & cook onions until golden, add mince, garlic and grated carrot. Add spices and cook for about 10min stirring occasionally to avoid meat from sticking to the bottom. If too dry 25ml water can be added to moisten. Set aside
Heat tin of overcooked beans or if not available heat beans slowly and mash lightly with potato masher.
Cut avocado and mash flesh with lemon juice and season with salt
How to build the salad:
Divide washed lettuce onto 4 plates leaving enough space around the edge to line corn chips around the plate & leaving space in the center for the cooked Mexican mince. ( Warm mince will make
lettuce limp)
Place sliced cucumber, tomato wedges & sliced peppers on lettuce
In the center of the plate dish up the cooked Mexican mince.
On top of mince place 2 Tbls overcooked beans,
Divide mashed avocado and spoon on top of beans.
Sprinkle grated cheese on top of avocado &
Finish off with 1-2 generous spoonfuls of sour cream.

Garnish with chili salsa or serve as is.

To eat spoon the layers onto the corn chips and enjoy a crunchy Mexican taste explosion.
